Theodore was a professor of international affairs at American University's School of International Service in Washington, DC, from 1965 until 1983, where he garnered many teaching honors.

Couloumbiswas a professor of international relations at the University of Thessaloniki's School of Law from 1983 to 1989 before relocating to the University of Athens in early 1990.

Couloumbis worked as a senior fellow at the US Institute of Peace from 1995-to 1996 and as a policy scholar at the Woodrow Wilson International Center for Scholars from 2006-to 2007.

From its inception in 2003 until 2006, Theodore served as an expert in the Foreign Ministry's Foreign Policy National Council.

Theodore's research concentrated on post-Cold War international conflict resolution and features of Greek foreign policy.
